- 4 boneless, skinless chicken breasts (1.5 pounds)
- Salt and black pepper
- 1/2 cup all-purpose flour
- 4 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers
- Fresh parsley and lemon slices for garnish
Instructions
- Season chicken with salt and pepper; dredge in flour.
- In a large skillet, heat olive oil and butter over medium-high heat. Cook chicken for 4-5 minutes per side until golden brown. Remove and keep warm.
- In the same skillet, combine chicken broth and lemon juice, scraping browned bits from the pan. Stir in capers and simmer for 2-3 minutes.
- Add remaining butter to the sauce, whisk until combined. Return chicken to the skillet, coating with sauce.
- Serve garnished with parsley and lemon slices.
