- 2 tbsp Avocado oil
- 1 tbsp Chipotle adobo or powder
- 2 tbsp Honey
- 1 cup Pineapple chunks
- Fresh ginger
- Fresh cilantro
- 1 Jalapeño
- Juice of 1 Fresh lime
- 1 cup Finely shredded cabbage
- Queso Fresco (optional)
- ¼ cup Cilantro lime sauce (optional)
- 1 Avocado (optional)
Instructions
- Prepare the salsa by mixing pineapple chunks, chopped cilantro, minced ginger, diced jalapeño, lime juice, and salt in a bowl. Chill in the refrigerator.
- Coat salmon fillets in chipotle adobo, honey, avocado oil, salt, and pepper. Sear in a preheated skillet for about 4 minutes on each side until cooked through.
- Warm tortillas and assemble tacos by placing seared salmon on each tortilla and topping with salsa and shredded cabbage.
