- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup freshly grated Parmesan cheese
- 1 cup panko breadcrumbs
- 4 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 1 cup low-sodium chicken broth
- 2 tbsp freshly squeezed lemon juice
Instructions
- Preheat your oven to 400°F (200°C) and lightly coat a baking dish with nonstick spray.
- Season both sides of the chicken breasts generously with salt and pepper.
- In one bowl, combine Parmesan cheese and panko breadcrumbs. In another bowl, drizzle olive oil over the seasoned chicken before generously coating it in the breadcrumb mixture.
- Place the coated chicken in the prepared baking dish and bake for 25-30 minutes until golden brown (internal temperature should reach at least 165°F).
- While the chicken bakes, heat chicken broth in a saucepan over medium heat, add minced garlic, and simmer until fragrant. Stir in lemon juice.
- Once baked, drizzle garlic sauce over each piece of chicken before serving.
