- 1 lb lean ground beef
- 4 medium russet or Yukon Gold potatoes, thinly sliced
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 2 cups low-sodium vegetable broth
- 1 cup shredded sharp cheddar cheese
- 1 tsp freshly cracked black pepper
- 1 tsp dried oregano
Instructions
- Preheat your oven to 375°F (190°C). Spray a large baking dish with nonstick cooking spray.
- In a skillet over medium heat, brown the ground beef for about 5-7 minutes. Drain excess fat, then add onion and garlic; sauté until fragrant.
- Layer half of the sliced potatoes in the baking dish and season with black pepper and oregano.
- Spread the beef mixture evenly over the potatoes.
- Pour vegetable broth over the layers and top with remaining potato slices.
- Sprinkle shredded cheese on top, cover with foil, and bake for 45 minutes.
- Allow to sit for 5 minutes before serving.
