- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, sliced
- 1 cup green beans, trimmed
- 2 hard-boiled eggs, quartered
- 1/2 cup black olives (Kalamata or pitted)
- 1 can (5 oz) tuna in water or olive oil, drained
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
Instructions
- Rinse and dry mixed salad greens.
- Blanch green beans in boiling salted water for 3 minutes; then plunge into ice water.
- Boil eggs in cold water for 10 minutes; cool in cold water before peeling.
- Slice cherry tomatoes and cucumber into bite-sized pieces.
- In a large bowl, combine greens, tomatoes, cucumber, green beans, olives, and tuna.
- Top with quartered eggs and drizzle with olive oil and red wine vinegar. Toss gently and enjoy!
