Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent (about 5 minutes). Stir in minced garlic until fragrant.
- Add Cajun seasoning and diced bell peppers; sauté for another 2 minutes.
- Pour in vegetable broth while scraping the pot's bottom for flavor. Bring to a gentle boil.
- Reduce heat to low and add fish fillets; simmer for about 8 minutes or until cooked through.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley and crusty bread on the side.
