Instructions
- Cook tortellini in salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add olive oil and sauté the diced onion until translucent (about 3-4 minutes). Add minced garlic and ground beef, cooking until browned.
- Stir in enchilada sauce and sour cream; simmer for about 5 minutes to blend flavors.
- Gently fold in the cooked tortellini until well-coated with the sauce.
- Top with shredded cheddar cheese, cover the skillet until melted (about 2 minutes).
- Serve warm, garnished with fresh cilantro if desired.
