Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup whole milk
- 1/2 cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 tbsp ground cinnamon
- 1/2 cup brown sugar (light or dark)
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and cinnamon.
- In another bowl, mix milk, vegetable oil, and eggs until smooth. Combine with dry ingredients until just mixed—do not overmix.
- In a small bowl, mix brown sugar and cinnamon. Pour half the batter into the prepared pan and sprinkle with half the brown sugar mixture. Add remaining batter and top with the rest of the brown sugar mixture.
- Using a knife, swirl through the batter gently.
- Bake for 25-30 minutes or until a toothpick comes out clean. Let cool slightly before drizzling with glaze made from powdered sugar mixed with milk.
