- Salt and pepper to taste
Instructions
- Cut chicken into bite-sized pieces and season with olive oil, chili powder, cumin, salt, and pepper.
- In a large pan over medium-high heat, sauté the seasoned chicken until browned (about 6 minutes).
- Add diced bell peppers, onion, and minced garlic; cook until veggies soften (around 5 minutes).
- Pour in half a cup of broth to deglaze the pan and simmer until chicken is fully cooked (internal temperature of 165°F).
- Serve hot topped with cilantro, sour cream or Greek yogurt, and lime wedges.
