Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin pan with liners or cooking spray.
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- In another bowl, mix cottage cheese, eggs, milk, and half of the chocolate chips until well combined.
- Gently fold the wet ingredients into the dry ingredients until just mixed; do not overmix.
- Fill each muffin cup about two-thirds full with batter and sprinkle remaining chocolate chips on top.
- Bake for 20-25 minutes until golden brown. A toothpick inserted should come out clean.
- Let cool slightly before enjoying!
