Instructions
- In a large mixing bowl, combine the drained corn, diced red bell pepper, shredded cheese, mayonnaise, and black pepper. Mix well until all ingredients are evenly distributed.
- Just before serving, gently fold in the crushed Chili Cheese Fritos to maintain their crunch.
- Garnish with fresh cilantro if desired and serve immediately.
