Instructions
- Preheat oven to 425°F (220°C).
- Wash and chop all vegetables into bite-sized pieces.
- In a mixing bowl, combine vegetables with olive oil, garlic, salt, pepper, oregano, and thyme; toss until evenly coated.
- Spread the seasoned vegetables in a single layer on a baking sheet.
- Roast for 25-30 minutes, stirring halfway through until tender and caramelized.
- Remove from oven and garnish with fresh parsley before serving.
