- 2 cups cherry tomatoes (approximately 300g)
- 8 oz feta cheese, crumbled (approximately 225g)
- 2 tbsp extra virgin olive oil
- 3 garlic cloves, minced
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup pine nuts, toasted
Instructions
- Preheat your oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
- In a bowl, toss cherry tomatoes and minced garlic with olive oil, salt, and pepper until coated.
- Layer half of the tomato mixture in the baking dish. Crumble half of the feta on top. Add remaining tomatoes and finish with the rest of the feta.
- Sprinkle toasted pine nuts over the top. Bake for 25-30 minutes until tomatoes are soft and feta is golden.
- Garnish with fresh basil before serving. Enjoy warm as a main course or side dish.
