- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook chicken for 6–7 minutes per side until golden brown. Remove from skillet and set aside.
- In the same skillet, sauté minced garlic until fragrant (about 1 minute).
- Add heavy cream and chicken broth; stir and simmer until slightly thickened.
- Mix in chopped sun-dried tomatoes and spinach; cook until spinach wilts.
- Return chicken to the skillet, coating it with sauce. Simmer for an additional 2 minutes.
- Serve hot, garnished with extra sun-dried tomatoes or Parmesan cheese if desired.
