Instructions
- Gather all ingredients and brew strong coffee; let it cool.
- In a mixing bowl, whip the heavy cream until soft peaks form.
- In another bowl, blend mascarpone cheese, cooled coffee, and powdered sugar until smooth.
- Gently fold the whipped cream into the mascarpone mixture.
- Scoop small balls of the mixture onto a parchment-lined baking sheet; chill if sticky.
- Melt chocolate chips in a microwave or double boiler; coat each truffle in chocolate and place back on the sheet to set.
