- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz block feta cheese
- 3 tbsp extra virgin olive oil
- 2 tsp fresh oregano (or 1 tsp dried)
- 2 tsp fresh thyme (or 1 tsp dried)
- Juice of 1 lemon
- 2 tsp garlic powder
- 4 tbsp balsamic vinegar
- 1 tbsp honey or maple syrup
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Season chicken breasts with salt, pepper, garlic powder, and half of the herbs.
- In a bowl, crumble the feta cheese and mix with olive oil, lemon juice, garlic powder, and remaining herbs.
- Place seasoned chicken in the baking dish and spread the feta mixture over each breast.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of at least 165°F (75°C).
- While baking, whisk together balsamic vinegar and honey or maple syrup for the vinaigrette.
- Serve chicken drizzled with vinaigrette.
