- 4 boneless, skinless chicken breasts (1.5 lbs)

- 1 bell pepper (mixed colors), sliced
- 1 medium zucchini, sliced into half-moons
- 1 cup cherry tomatoes, halved

- 2 tbsp honey or maple syrup
- 2 tbsp olive oil

Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Season chicken breasts with salt and pepper on both sides.
- Slice bell peppers, halve cherry tomatoes, and cut zucchini into half-moons.
- In a bowl, whisk together balsamic vinegar, honey or maple syrup, minced garlic, and olive oil.
- Place seasoned chicken in the baking dish surrounded by chopped veggies. Drizzle balsamic sauce over everything.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C). Serve hot with remaining sauce drizzled on top.
