- 4 boneless, skinless chicken breasts
- 2 tablespoons blackening seasoning (paprika, cayenne pepper, garlic powder, oregano)
- 2 tablespoons olive oil
- 8 oz fettuccine or linguine
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 3 garlic cloves, minced
Instructions
- Prepare your ingredients by measuring everything out.
- Mix blackening seasoning and rub over both sides of the chicken breasts.
- Heat olive oil in a large skillet over medium-high heat and sear chicken for 5-7 minutes on each side until cooked through (internal temperature of 165°F).
- Boil salted water in a large pot; cook fettuccine or linguine according to package instructions until al dente. Reserve some pasta water before draining.
- In the same skillet, sauté minced garlic until fragrant. Stir in heavy cream and bring to a simmer; add Parmesan cheese until melted and smooth.
- Toss cooked pasta into the sauce and top with sliced blackened chicken. Adjust creaminess with reserved pasta water as needed.
