Instructions

- In another bowl, mix grated carrots, oil, and eggs until well combined.
- Gently fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
- If desired, fold in nuts for added crunch.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for about ten minutes before transferring to a wire rack.
