Instructions
- Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter; press into cupcake liners and bake for 10 minutes.
- Beat softened cream cheese until smooth; gradually add sugar until fluffy. Stir in vanilla extract.
- Fill baked crusts with cheesecake mixture, smoothing the tops. Bake for an additional 15-20 minutes.
- Cool at room temperature, then chill in the fridge for at least two hours.
- Melt dark chocolate chips; dip fresh strawberries and place on parchment paper to cool.
- Top each cheesecake with a chocolate-covered strawberry before serving.
