- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar, divided
- 2 tsp ground cinnamon, divided
- 16 oz cream cheese, softened
- 3 large eggs
- ½ cup sour cream
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Mix graham cracker crumbs, melted butter, ¼ cup sugar, and 1 tsp cinnamon in a bowl until crumbly. Press into the bottom of the prepared pan.
- In another bowl, beat cream cheese until smooth. Add remaining sugar, eggs one at a time, sour cream, and blend until smooth.
- Pour filling over the crust and sprinkle with remaining cinnamon. Bake for 30-35 minutes until set but slightly jiggly in the center.
- Cool completely in the pan before refrigerating for at least four hours or overnight before slicing.
