- 3 boneless, skinless chicken breasts (about 1.5 pounds)
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 2 cups fresh spinach
- 1 tsp garlic powder
- 1/2 cup chicken broth
- 2 sheets puff pastry (thawed)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a skillet over medium heat, cook diced chicken breasts for 6-8 minutes until no longer pink. Season with salt, pepper, and garlic powder.
- In a bowl, combine cooked chicken, mozzarella, cheddar, spinach, and chicken broth until well mixed.
- Roll out puff pastry on a floured surface and cut into rectangles. Place spoonfuls of filling on one half of each rectangle.
- Fold the pastry over the filling and seal edges with a fork.
- Bake for 20-25 minutes until golden brown. Serve warm.
