- 1 lb ground beef (or ground turkey)
- 1/4 cup fresh parsley, chopped
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1/2 cup breadcrumbs (plain or seasoned)
- 1 cup Greek yogurt
- 1/2 cucumber, grated and excess moisture squeezed out
- 2 tbsp lemon juice
- Salt & pepper to taste
Instructions
- In a large bowl, mix together ground beef, parsley, garlic, oregano, breadcrumbs, salt, and pepper until just combined.
- Shape the mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
- Preheat oven to 400°F (200°C) and bake meatballs for 20-25 minutes until golden brown.
- In a separate bowl, combine Greek yogurt, cucumber, lemon juice, minced garlic, salt, and pepper to create the tzatziki sauce.
- Assemble bowls with cooked grains as a base; top with meatballs and drizzle generously with tzatziki.
