- 1 lb lean ground beef
- 2 cups leftover mashed potatoes
- 1 cup grated cheddar cheese (divided)
- 1 medium onion, chopped
- 1 tsp garlic powder
- 1/2 cup ketchup (divided)
- 2 large eggs
- 1 cup panko breadcrumbs
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
- Sauté chopped onion in a skillet over medium heat until translucent.
- In a large bowl, mix together ground beef, sautéed onions, mashed potatoes, garlic powder, eggs, panko breadcrumbs, and half of the cheddar cheese until well combined.
- Shape the mixture into a loaf in the prepared baking dish.
- Spread half of the ketchup over the top and sprinkle with remaining cheese.
- Bake for about 60 minutes or until cooked through (internal temperature should reach 160°F). Let rest before slicing.
