Instructions

- In another bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, then mix in lemon juice, zest, and vanilla.
- Gradually combine dry ingredients with wet ingredients until just mixed.
- Fill each muffin cup two-thirds full with batter and bake for 12-15 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool slightly before serving.
