- 4 medium ripe peaches (sliced)
- 1/4 cup unsalted butter (1/2 stick, softened)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 large eggs (room temperature)
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease a round baking pan.
- In a small saucepan over low heat, melt 2 tbsp butter with brown sugar until gooey. Pour half into the pan and arrange peach slices on top; drizzle remaining mixture over peaches.
- In a mixing bowl, cream the remaining butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- In another bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients until just combined.
- Pour batter over peaches and smooth out. Bake for 35-40 minutes or until golden brown and a toothpick comes out clean.
- Let cool slightly before flipping onto a serving plate.
