- 1 cup ladyfinger cookies
- 1 cup mascarpone cheese
- 1/2 cup unsalted pistachios, finely chopped
- 1 cup strong brewed coffee (cooled)
- 1/4 cup granulated sugar
- 2 tbsp unsweetened cocoa powder
Instructions
- Brew coffee and let it cool completely.
- In a bowl, mix mascarpone cheese and sugar until smooth.
- Fold in half of the chopped pistachios into the mascarpone mixture.
- Quickly dip ladyfingers in the cooled coffee and layer them in a dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat layering with remaining ingredients.
- Dust cocoa powder on top and refrigerate for at least 4 hours before serving.
