Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In another bowl, cream together the butter and granulated sugar until light and fluffy. Mix in the egg and vanilla until fully combined.
- Gradually add the dry ingredients to the wet mixture until just combined; avoid overmixing.
- Scoop about two tablespoons of dough, flatten into discs on the baking sheet, place a teaspoon of jam in the center, and top with another disc. Seal edges using a fork.
- Bake for 12–15 minutes until lightly golden. Allow cooling before icing with a mixture of powdered sugar and milk. Decorate with sprinkles.
