- 1 box (15.25 oz) red velvet cake mix
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 cup sour cream
- 2 tsp vanilla extract
- 3 large eggs, room temperature
- 20 Oreo cookies, crushed (for crust)
- 1/4 cup unsalted butter, melted (for crust)
Instructions
- Preheat oven to 325°F (160°C). Grease or line a springform pan with parchment paper.
- In a bowl, mix crushed Oreos with melted butter and press into the bottom of the prepared pan to form the crust.
- In another bowl, beat cream cheese until smooth. Gradually add sugar, sour cream, vanilla extract, and eggs one at a time, mixing well after each addition.
- Fold in red velvet cake mix until just combined. Pour half the filling over the crust; sprinkle chopped Oreos on top and layer remaining filling.
- Bake for 60-70 minutes until edges are set but center jiggles slightly. Let cool in the oven for an hour before refrigerating for at least four hours.
