Instructions
- Preheat your oven to 350°F (175°C). Grease and line a standard loaf pan with parchment paper.

- In another bowl, beat eggs, vegetable oil, fresh lemon juice, and lemon zest until smooth.
- Pour the wet ingredients into the dry mix and stir gently until just combined; avoid overmixing.
- Transfer the batter to the prepared loaf pan and bake for 55-60 minutes or until a toothpick inserted comes out clean.
- While cooling slightly in the pan, prepare the glaze by mixing powdered sugar with enough lemon juice for a drizzle consistency. Drizzle over the cooled loaf before slicing.
