Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt; set aside.
- In a large bowl, cream butter with granulated and brown sugars until light and fluffy (about 2 minutes).
- Beat in egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Gently fold in chopped strawberries and softened cream cheese.
- Scoop tablespoon-sized amounts of dough onto prepared baking sheets, leaving space between each cookie.
- Bake for 10–12 minutes until lightly golden around the edges but soft in the center.
- Transfer to wire racks to cool slightly before serving.
