Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a rectangular baking dish.
- In a large bowl, whisk together flour, sugar, baking powder, and a pinch of salt.
- In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
- Gradually add the dry ingredients to the wet mixture, alternating with milk. Gently fold in chopped strawberries.
- Pour batter into the prepared baking dish and bake for 30-35 minutes or until golden brown.
- For the icing: mix powdered sugar with softened butter and vanilla extract. Gradually add the plant-based gelling agent until creamy.
- Spread icing generously over the cooled cake and serve.
