Instructions
- Shred the rotisserie chicken into bite-sized pieces.
- If not already prepared, cook jasmine rice according to package instructions.
- In a large skillet over medium heat, sauté mixed vegetables until tender-crisp (about 5 minutes).
- Add sweet chili sauce to the skillet and stir to coat the vegetables evenly.
- Assemble bowls with a scoop of rice topped with sautéed veggies and shredded chicken.
- Garnish with sesame seeds and sliced green onions before serving.
