- 1 ½ cups all-purpose flour
- ¾ cup ground pistachios
- ½ cup coconut sugar
- 2 tsp baking powder
- 1 tsp ground cinnamon
- ½ cup unsweetened applesauce
- ¾ cup non-dairy milk (almond or oat)
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan or line it with parchment paper.
- In a large bowl, whisk together flour, ground pistachios, coconut sugar, baking powder, and cinnamon until combined.
- In another bowl, mix applesauce and non-dairy milk until smooth; optionally add vanilla extract.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Transfer the batter to the prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
