- 1¾ cups crushed graham crackers
- ¼ cup light brown sugar
- 6 tbsp unsalted butter, melted
- 8 oz cream cheese
- 2 cans sweetened condensed milk
- ½ cup key lime juice
- ½ cup heavy cream
Instructions
- Preheat the oven to 350°F (177°C). Line an 8×8 inch baking pan with parchment paper.
- In a food processor, crush graham crackers until sandy. Mix with brown sugar and lime zest; stir in melted butter until combined.
- Press mixture into the baking pan and bake for 10 minutes. Allow cooling.
- In a stand mixer, beat cream cheese until smooth. Gradually add sweetened condensed milk, then mix in key lime juice and zest.
- Pour filling over the cooled crust and bake for another 10 minutes.
- Cool at room temperature before chilling in the refrigerator for at least 4 hours or overnight.
- Whip heavy cream with sugar and lime juice; top bars before serving.
