Instructions

- In a large mixing bowl, whisk together flour, remaining sugar, baking powder, and lemon zest.
- In another bowl, combine non-dairy milk and lemon juice; let sit for five minutes to create a buttermilk effect.
- Mix wet ingredients into dry ingredients until just combined; gently fold in blueberries.
- Pour batter into the prepared dish and bake for 30-35 minutes or until golden brown. Allow to cool slightly before serving.
