- 1 cup + 2½ tbsp graham cracker crumbs
- ⅓ cup sugar
- 5 tbsp unsalted butter (melted)
- 3 egg yolks
- 1½ tsp lime zest
- ⅔ cup lime juice
- 14 oz can sweetened condensed milk
- ¼ cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix until well combined and press into a greased 9×9-inch baking pan. Bake for about 10 minutes or until golden brown.
- In another bowl, whisk egg yolks until thick. Gradually add sweetened condensed milk, then stir in lime zest and juice.
- Pour the filling over the cooled crust and bake for an additional 10 minutes until slightly puffed.
- Allow to cool at room temperature before chilling in the refrigerator for at least four hours.
- Before serving, whip heavy cream until stiff peaks form and dollop on each bar; garnish with lime slices.
