- 8 c. cubed watermelon (about 1" in size)
- 4 c. hulled and quartered strawberries
- 3 c. blueberries
- 18 large mint leaves (chopped)
- 1/2 c. fresh lime juice
- 4 T. powdered sugar
- 4 T. white Vanilla Extract (water-Free) (optional)
- Jicama stars (optional)
Instructions
- In a large mixing bowl, combine cubed watermelon, quartered strawberries, and blueberries.
- In a small bowl, mix chopped mint leaves with lime juice and powdered sugar. Muddle gently to release flavors.
- Drizzle the mint-lime mixture over the fruit and fold gently to combine without mashing.
- Chill in the refrigerator for at least 30 minutes before serving.
