Instructions
- Drain the tinned peaches and reserve some juice.
- In a blender, combine the peaches, reserved juice, peach puree (if desired), and simple syrup. Blend until smooth.
- Strain the mixture through a fine mesh sieve for a silkier texture.
- Divide the peach mixture between two glasses.
- Top each glass with chilled sparkling wine, pouring gently to maintain bubbles.
- Stir gently and serve immediately, garnished with fresh parsley or peach slices.
