  • 170 grams almond meal
  • 200 grams powdered sugar
  • 70 grams granulated sugar
  • 6 ounces cream cheese
  • 15 fresh cherries
  • Red and blue gel paste food coloring

Instructions

  1. Allow egg whites to reach room temperature.
  2. Process almond meal and powdered sugar together; sift out lumps.
  3. Whip egg whites with cream of tartar until soft peaks form; gradually add granulated sugar until stiff peaks form.
  4. Divide meringue; color one half red and mix royal blue with violet in the other half.
  5. Fold in sifted almond mixture separately into each colored meringue.
  6. Pipe rounds onto parchment-lined sheets and sprinkle glitter on blue ones.
  7. Let macarons dry until a skin forms, then bake at 300°F for 10–15 minutes.
  8. Cool shells before filling with cream cheese mixture and halved cherries.
