Instructions
- Wash and slice the cucumber into rounds and quarter the radishes.
- Thinly slice the red onion and soak it in cold water for 10 minutes to mellow its flavor.
- In a large bowl, combine cucumbers, radishes, drained onion slices, and chopped parsley.
- In a small bowl or jar, mix olive oil with lemon juice; add salt and pepper to taste.
- Pour the dressing over the veggie mix and toss gently until evenly coated.
- Chill in the refrigerator for at least 15 minutes before serving.
