- 2 ripe mangoes (about 2 cups diced)
- 1 medium cucumber (1 cup sliced)
- 1 bell pepper (1 cup diced)
- 1/2 small red onion (1/4 cup thinly sliced)
- 1/4 cup fresh cilantro (chopped)
- Juice of 2 limes
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Wash all produce thoroughly. Peel and cube the mangoes, slice the cucumber, dice the bell pepper, and thinly slice the red onion.
- In a large bowl, combine mangoes, cucumber, bell pepper, red onion, and cilantro. Toss gently.
- In a small bowl, whisk together lime juice and olive oil. Season with salt and pepper.
- Drizzle dressing over salad mixture; toss gently to coat.
- Refrigerate for at least 15 minutes to allow flavors to meld.
- Transfer salad to serving dishes; garnish with additional cilantro and lime wedges if desired.
