Instructions
- Cut the watermelon into bite-sized cubes and slice the cucumber and red bell pepper.
- Roughly chop the fresh mint leaves.
- In a bowl, whisk together lime juice, soy sauce, and sesame oil until well combined.
- In a large mixing bowl, toss together the watermelon, cucumber, bell pepper, and mint.
- Drizzle the dressing over the salad mixture and gently toss to coat.
- Serve in a platter or individual bowls, garnished with extra mint if desired.
