- 8 oz plant-based cream cheese
- 2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
- In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat granulated sugar, brown sugar, and plant-based oil until smooth. Stir in grated carrots.
- Gradually add dry ingredients to wet mixture and mix gently until just combined.
- Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Cool cakes in pans for ten minutes before transferring to wire racks to cool completely. Frost with plant-based cream cheese frosting once cool.
