Instructions
- Preheat the oven to 350°F (175°C) and grease a jelly roll pan lined with parchment paper.
- In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.
- In another bowl, beat sugar and eggs until light and fluffy; gradually mix in vegetable oil and fold in grated carrots.
- Gently combine dry ingredients with wet ingredients without overmixing.
- Spread the batter evenly in the prepared pan and bake for 15-20 minutes until a toothpick comes out clean.
- While cooling, beat cream cheese with powdered sugar and vanilla until smooth.
- Once cooled, invert the cake onto a powdered sugar-dusted towel and spread frosting evenly before rolling tightly.
- Serve sliced on a platter.
