Instructions
- Cook the rotini pasta in salted boiling water according to package instructions until al dente (about 8-10 minutes). Drain and rinse under cold water.
- In a mixing bowl, whisk together the lemon juice, minced garlic, olive oil, salt, and pepper until smooth.
- In a large bowl, combine the cooled pasta, arugula, cherry tomatoes, and Parmesan cheese. Drizzle with dressing and toss gently to combine.
- Taste and adjust seasoning as needed before serving.
