Ingredients
Scale
- 2 pieces chicken breasts (sliced in half horizontally)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1.5 teaspoons Cajun seasoning (divided between chicken and sauce)
- 1 tablespoon oil (for cooking the chicken)
- 2 tablespoons butter (for the sauce base)
- 1 medium onion (diced)
- 4 cloves garlic (minced, divided for sauce and bread)
- 1 medium bell pepper (diced, any color works well)
- 1 cup heavy cream
- 1 cup Parmesan cheese (freshly grated)
- 1 baguette or Italian bread
- 4 tablespoons butter (softened, for the garlic bread)
- 3 cloves garlic (minced, for the bread mixture)
- 3 tablespoons fresh parsley (chopped)
- 1.5 cups mozzarella cheese (shredded)
- to taste chilli flakes
- to taste Parmesan cheese (freshly grated, for topping)
Instructions
- Slice the chicken breasts in half horizontally to create thinner, more even pieces. Season both sides with salt, black pepper, paprika, garlic powder, and 1 teaspoon Cajun seasoning.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Cook the chicken for 6-7 minutes per side until golden brown and fully cooked through. Remove from the pan and let rest for a few minutes, then slice into strips.
- In the same pan, melt 2 tablespoons butter over medium heat. Add the diced onion and cook for 2-3 minutes until slightly softened.
- Add 4 cloves minced garlic and sauté for 30 seconds until fragrant. Stir in the diced bell pepper and cook for another 2 minutes until just tender.
- Season the mixture with remaining Cajun seasoning, paprika, and black pepper to taste. Pour in 1 cup heavy cream and let it simmer gently for 2-3 minutes.
- Add 1 cup freshly grated Parmesan cheese and stir constantly until melted and the sauce becomes smooth and creamy. Adjust salt as needed and remove from heat.
- In a small bowl, combine 4 tablespoons softened butter with 3 cloves minced garlic and chopped fresh parsley.
- Slice your baguette or Italian bread in half lengthwise. Spread the garlic butter generously over both halves. Place on a baking sheet and bake at 375 degrees Fahrenheit for 5-7 minutes until lightly crispy and golden.
- Remove the toasted bread from the oven. Spread a generous layer of Cajun Alfredo sauce over each bread half.
- Sprinkle 1.5 cups shredded mozzarella cheese over the sauce, then arrange the sliced Cajun chicken on top. Drizzle a little more Cajun Alfredo sauce over the chicken.
- Return to the oven and bake at 375 degrees Fahrenheit for 7-10 minutes until the cheese is melted, bubbly, and slightly golden on top.
- Remove from the oven and finish with a sprinkle of fresh parsley, chilli flakes, and freshly grated Parmesan. Slice and serve immediately while hot.
