Ingredients
Scale
- 2 pieces chicken breasts, halved horizontally (creates four thin cutlets)
- 1 tablespoon oil (plus extra for frying)
- to taste salt (for seasoning)
- to taste pepper (for seasoning)
- to taste garlic powder (for seasoning)
- to taste paprika (for seasoning)
- 1/2 cup flour
- 2 pieces eggs, beaten
- 1 cup panko breadcrumbs
- 1 teaspoon dried parsley (mixed with panko)
- 1/2 cup mayonnaise
- 1/2 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 clove garlic, grated
- to taste black pepper (to taste)
- 1 to 2 tablespoons water (if needed for dressing consistency)
- 4 pieces burger buns
- 2 cups chopped romaine lettuce
- to taste extra grated Parmesan cheese (for assembling)
- 2 tablespoons melted butter (for top bun)
- 1/2 teaspoon dried parsley (mixed with melted butter)
Instructions
- Pat the chicken breasts dry and cut them in half horizontally to create four thin cutlets. Season all sides generously with salt, pepper, garlic powder, and paprika, then brush lightly with 1 tablespoon of oil.
- Mix salt, pepper, garlic powder, and paprika into the flour in a shallow bowl. Place beaten eggs in another bowl and combine panko with 1 teaspoon dried parsley in a third bowl.
- Coat each chicken cutlet in seasoned flour, shaking off excess, then dip in beaten egg, and finally dredge in the panko mixture, pressing gently so the coating adheres.
- Heat oil in a large skillet over medium-high heat until shimmering. Working in batches if needed, fry the breaded chicken for 5 to 7 minutes per side, or until golden brown and crispy. Chicken is done when it reaches an internal temperature of 165 degrees Fahrenheit.
- In a small bowl, whisk together mayo, grated Parmesan, lemon juice, Dijon mustard, Worcestershire sauce, grated garlic clove, and black pepper until smooth and creamy. If the dressing is too thick, add 1 to 2 tablespoons of water, one splash at a time. Reserve half the dressing for spreading on the buns.
- Place chopped romaine lettuce in a medium bowl and toss with the reserved half of the Caesar dressing, coating evenly. Top with a generous sprinkle of grated Parmesan cheese and toss once more.
- Spread a generous amount of reserved Caesar dressing on the bottom half of each burger bun.
- Place one crispy chicken cutlet on the dressed bun, letting it rest directly on the dressing.
- Top the chicken with a handful of Caesar salad, allowing some of the dressed lettuce and Parmesan to nestle against the crispy coating.
- Mix melted butter with 1/2 teaspoon dried parsley and brush generously over the top bun's exterior and interior. Sprinkle with grated Parmesan, then place on top of the burger.
